Anyone but anyone can make this soup with their eyes shut. There are 2 stock options. Chicken or veg. This recipe feeds 4 comfortably.
Remember 3 and 2 and 1! You can all count to 3 right?
This soup is ´pottage bonne femmé or good woman’s soup. My maternal grandmothers’ signature soup.
You need a hand blender. Don’t try this soup without it or it will end up in a bin. My student days attempted such stupidity and it’s never been done again.
3 of each below peeled and chopped.
Potatoes carrots and leeks. Once chopped sautéed in a large nob of butter.
Once coated add 2 pints of water and 3 stock cubes of your choice and 1 tea spoon of sugar. 3 2 1 remember hahaha!
Bring to the boil then simmer for about 20 minutes or until the veg is soft. Allow to cool slightly and then blend. Add some ground black pepper. Salt should not be needed as the stock will do it for you.
Too thick then add a dash of milk and blend again. The soup freezes beautifully for a smug lunch to be pulled out of the bag at a later date.
Now get bowl. A chunk of bread or two.
Put the soup in the bowl and maybe a drizzle of cream if you fancy? Grate on some Parmesan or pecorino or simply don’t add the cheese. You can make the bread into ‘boats’ if you want kids to knock it back. Boats? Literally bread placed in chunks for them to fish out of the sea…
I promise that you will not be disappointed and I am yet to meet anyone who doesn’t like this soup.
